For the sauce: Start with 1/2 cup of mayonnaise, 1/2 teaspoon of Chili Garlic Sauce (or Red Curry Paste) and about 1/2 cup of Sweetened Chili Sauce (for Spring Rolls).
Mix it together and taste it. If you like it hot you can adjust it, but it gets hotter as it blends so do so sparingly.
Refrigerate until ready to use.
Take up to two pounds of raw shrimp. Peel, deviant, rinse, and drain. Season them with your favorite spices. (We like Ox Roast Seasoning)
Cook them however you like them. Sometimes I sauté them in butter and olive oil. Sometimes Sam cooks them on the grill. You can boil them if you prefer.
Mix them with the sauce and get ready for the complements!
